Coffee Loaf


Ingredients:

1 tablespoon instant coffee (nescafe)
3/4 cup boiling water
2 cups self-raising flour
1/2 teaspoon baking powder
150 gram butter
85 gram brown sugar
2 large eggs (lightly beaten)
1/3 cup finely chopped pecan nuts

Method:
1. Mix instant coffee with hot water, set aside and leave to cool.
2. Melt butter and sugar in a pan under low heat and keep stirring until sugar dissolve. Remove from heat.
3. Sieve self raising flour and baking powder and put in a bowl.
4. Add the chopped pecan nuts.
5. Mix the beaten egg into the coffee mixture .
6. Add melted butter mixture and egg mixture to the dry ingredients. Using a wooden spoon, stir until combine and do not over beat.
7. Line pan loaf with grease paper.
8. Pour the batter into pan and bake in a preheated oven temp 375F for 40 minutes or until skewer inserted comes out clean.
9. Remove from oven and let the cake cool completely before spreading the topping

Topping:

1 cup icing sugar
15 gram butter
1 teaspoon instant coffee mix with 2 tablespoon hot water.

Method:

Put everything in a pan and using double boil method, heat and stir until icing is smooth and glossy. Spread on the cake.
