Mixed Bean Salad

Beans are a good way to add fiber to your diet, especially soluble fibre. Generally, 1 cup of cooked beans provides 9 to 13 grams of fiber. The soluble fibre can help lower blood cholesterol. Beans are also high in protein, complex carbohydrates and iron. So last nite, I made some for dinner but my kids doesnt like the taste of kidney beans, they ate everything else accept the kidney beans. I had the leftover for lunch today.

Ingredients:-
350 grams mixed beans (kidney beans, soybeans, green beans) i bought a packet of mix beans from the store yesterday)
5 baby tomatoes (cut into cubes) or any kind of tomatoes
1 green pepper (cut into cubes)
1/2 big onion (cut into cubes)
1/4 cup chopped parsley

Seasoning:-
1 tablespoon olive oil
1 teaspoon sugar
3 tablespoon vinegar (I used japanese vegetable vinegar)
lemon juice
salt and pepper to taste

Mix everything in a bowl and add all the seasoning. Toss well. Cover and refrigerate for a while. Serve chilled.

Note: To make it easier use italian dressing and 1 tablespoon olive oil. Adjust the taste to your liking.
