Wajik Biko



I had this at a friend's house and she is from Philipines. A dessert called Biko which is quite similar to a very traditional Malaysian dessert called wajik. The girls and me like it so much. It is easy to make unlike the traditional Malaysian wajik.


Ingredients:-

3 cups glutinous rice (here i use japanese mochi gome)
2 cans coconut milk - 800 ml
1 1/2 cup brown sugar - adjust the sweetness to your liking
50 grams ground peanuts
50 grams condensed milk
2 cups water
a pinch of salt







Method:-

1) Cook rice in rice cooker with 2 cups of water, 1 cup coconut milk and a pinch of salt.
2) In a pan, pour the remaining coconut milk (leaving behind 20 ml for later) and add sugar. Under medium heat stir until sugar dissolved.
3) Add in the cooked rice and continue to stir until all coconut milk evaporates.
4) Pour the mixture into a pan and spread them evenly.
5) Pour 20ml coconut milk on top of the mixture and bake in a preheated oven 350F for 30 minutes or until the coconut milk evaporates.
6) Take out pan and sprinkle the ground peanut and continue to bake for 15 minutes.
7) Take out pan and spread the condensed milk and bake for further 15 minutes until top becomes brown.
8) Cool completely before cutting.
