Corn Bread



Ingredients:-

115 gm flour
50 gm caster sugar
a pinch of salt
1 tablespoon baking powder
170 gm cornmeal
350 ml milk
2 eggs
200 gm butter or margarine (melted)

Method:-

1. Sift the flour, sugar, salt and baking powder into a bowl.
2. Add the cornmeal and mix well. Make a well in the centre.
3. Whisk together milk, eggs and melted butter.
4. Pour the mixture into the well and stir until just blended. Do not overmix.
5. Line a loaf tin with greaseproof paper and grease.
6. Bake in a preheated oven 375F for 45 minutes or until skewer inserted comes out clean.
