Victoria Sandwich Cake




Ingredients:-

175 gm butter or margarine (softened)
150 gm caster sugar
3 eggs (large size)
175 gm self-raising flour
1 teaspoon vanilla essence
4 tablespoon strawberry or raspberry jam
icing sugar, for dusting

Method:-

1. Grease and base-line two 18 cm round baking pan.
2. Beat the butter and sugar till light and fluffy.
3. Add the eggs, one at a time and beat well.
4. Add vanilla essence and mix well.
5. Fold in the flour, a little at a time.
6. Divide the mixture into two and bake for 20 minutes in a preheated oven temp. 375F.
7. When the cakes are cool, spread the jam and sandwich them together and sprinkle the icing sugar.
